I think the respawn is actually a week, but if you're on PC, just open console, select the ore vein, hit disable, then enable, and you should be able to mine. It's a glitch. Nothing you can do if you're on console, you'll just have to wait for a patch.. Hanover county corrections

I've noticed this to not be true for ore veins though. It's … Wait for around 2 weeks first and check the place and if it is still empty (sometimes there's a glitch where it will look like its ready to be mined but it doesn't give the option to) wait for 4 weeks. Also wait somewhere away from the mine otherwise it won't re-spawn the ores. .
